Ham - is ready to EAT - it has been Pickled (or cured) with our own recipe of herb & spices and Smoked…


You don’t need to do anything - besides refrigerate until opening and then open, carve & eat

OR if you like the flair of the festive season - our Hams are perfect for Glazing - the beautiful fat layer… the caramelisation (oh…heaven!) 

WHAT TYPE OF CURES?

Traditional 

Contains a small amount of synthetic nitrates to help with the color & shelf-life - which some prefer with such a large piece of ham or want it too last for a couple of weeks

**Majority of Ham in Australia contain synthetic nitrates


Naturally-Cured

Contains only NATURAL nitrates from vegetable extracts (No Numbers, No Nasties)

BUT you do have to accept there could be some less than pink patches, it will oxidize like a glass of wine - so it will change once opened - some discoloration and you really need to open it, enjoy it at its best and consume within 7-10 days.

Well it all goes back to how big were our pigs….  in a Free-Range situation and with Old Breeds - none of our pigs are the same!!  So our LEGS are all different…
