As the leaves began to change colour the phone begins to ring with orders for Salami Pigs…
Some families have the tradition of 'MAKING SALAMI' and needing the cooler months for the product to ferment & cure. So the middle of winter is the perfect timing. Over the years of offering Salami Pigs - we have received the return customers and feedback and they LOVE the Free-Range Berkshire Pigs - the darker meat, the sweeter fat - 'nothing compares' they say!
From Whole Carcasses/Pigs - you can also butcher the Whole Muscles such as Neck for Capocollo, Belly for Pancetta, Leg for Prosciutto... The Whole Pigs is a big task - so if you are starting out, pushed on time - we also offer TRIM (Meat & Fat) in smaller batches to have a go and all the hard work & waste is done for you!

Other things to note-
We have been offering Salami Pigs now for approx. a decade - so we think we have a handle on raising the right type of pig and selecting the best for you.
We DON’T offer barrows (castrated males)
We DO make sure the young females (gilts) ARE NOT CYCLING - we know the hormones affect the curing of the meat
Our butcher splits the animals - so NO cuts will be ruined - we do a PROFESSIONAL job
PLEASE BRING a tarp, plastic - something that the carcass can be placed on in your vehicle.
Once you receive the Carcass - it is all your care and responsibility.
